I want to write my own Java chat server and client applet, but I am not sure how to do this.  Where could I find some source code examples of how to do this and some documentation?

I'm about to finish coding a chat server a few days ago. I can send you code if you like. Send e-mail to netlearn@ceng.metu.edu.tr . The source code is free. It has some nice features like seeing channel logs, even the logs when you're not logged in and a built-in e-mail sender.
ps: the only thing not implemented is to kick a user from channel but it's child's toy ;)
