I am working on a kiosk that will give access to a number of games.  These games would normally run from a CD but because I want to have more than one, I wish to run them from the hard drive. Can this be done ?

Take a look at the Fakecd app from Ingo Warnke, ingo.warnke@rz.uni-rostock.de. Here is a snippet from the readme :
fakecd is a program that simulates a CD-ROM drive with a directory of a hard drive. Its intended  purpose is to allow running of CD-based software entirely from a hard drive.

Get it at
http://search.shareware.com/code/engine/File?archive=winsite-win95&file=games%2ffakecd%2eexe&size=8944

You can install/uninstall it before your game executes and map a directory to a virtual CD-ROM drive.
