Exchange decides where to put the information stores at time of installation and depending on your setup will try and span as much as possible across disks. The easiest way to find out where everything is (especially the users mailbox (private information store) is to run the Exchange optimizer - in the Exchange folder and has to be run as an admin.). This tells you the paths to the various components installed. A warning when you run this, it will stop all exchange services to perform the optimisation process, you can cancel out at any time, but it is either the 3rd or 4th screen in which tells you where things are installed.
