Outlook.pst, and mailbox.pst.  These contain all of you calandar, E-mail, preferences, and Mail settings.

Hope this is what you want.

*.pst is your personal folder, *.ost is an off-line folder, *.pab is a personal address book and *.rwz is your profile information.

Categories are stored in the registry.  Export to make a backup or to import on another computer.
Run regedit and then drill down to
HKEY_CURRENT_USER\Software\Microsoft\Office\8.0\Outlook\Categories
and
HKEY_LOCAL_MACHINE\Software\Microsoft\Office\8.0\Outlook\Categories
Use regedit's menu item FILE and then Export Registry File.  Name the file anything leaving the .reg extension.  To restore or import the key, just double click the file.

Also, in addition to the files mentioned in previous responses to this question, the *.FAV, *.NICK, Outlprint are involved.  Then name of the file preceding the extension, including for the *.RWZ (rules for the rules wizard) is based on the name of your exchange/outlook profile.

Some good information, not including the location of the categories, is summarized at http://www.slipstick.com/exchange/olbackup.htm
