explaining how des works would get long and i am not able to.
buy a book about cryptography, if you really need to know about it.
A basic description you can find at http://whatis.com/des.htm
DES is specified in ANSI X3.92 and X3.106 standards.
to understand the DES you need some mathematical background( number theory). though i think implementing the algorithm is not that difficult. you need a implementation?
http://www.acme.com/java/software/
classes + source for encryption/decryption . works with java 1.0.2

hope that helps
