How do you make GIFs with transparent backgrounds using PS5?

Very easy. You will use the GIF89a Export found in File-Export.
But there are a couple of different ways to do it.

Color Base Method  
The image is in Index Mode,
Open GIF89a Export dialogue box and using the the eye dropper click on the colors you want to be made transparent.
You can use this if the image doesn't contain any of the background color you are making transparent. It's the easiest way but gives you less control over what is masked.


Selection-based Transparency
The image is in RGB Mode.
Create a mask then export the image to GIF89a Export
This is more work but gives you more control over how and where the transparency is applied.

Layers-based Transparency
Export one or more layers as transparent gifs, they must be transparent layers, (grey and white checked background)

This is kind of a simplified answer but GIF89a Export is what is used for transparent gifs. It really depends on the background color or background image you are using as to how you make the background transparent

1) Convert image to Indexed-color mode (image->mode->indexed colors)
2) File->Export->GIF89a Export
Choose color(s) which you want to be transparent there and press OK.

Jack's answer works as long as the background colors you are making transparent are not also located inside the image.
