Can I use outlook as a mail client with Linux as a mail server. How would Outlook and Linux need to be configured??

Yes, use the pop3 option in outlook.
The linux has to be running pop3 client which it usually
is or if not check that it is by adding in

pop-3   stream  tcp     nowait  root    /usr/sbin/tcpd  ipop3d  

Check if this line is commented out.
You can also check for the client being running by telnetting to the linux machine on port 110
telnet <ipoflinux> 110
where ipoflinux is the ip address of the linux machine
or the name of it in DNS.

it should answer like

Escape character is '^]'.
+OK POP3 localhost v6.50 server ready  

if pop server is running.

You can also use imap to access the mail
imap as protocol in outlook if you are
running the imap server on the linux machine
us SMTP as protoclol for sending mail
