Yes.

<input type="hidden" name="recipient" value="whoever@wherever.com,whoeverelse@whereverelse.com">
<input type="hidden" name="required" value="fieldone,fieldtwo, fieldn">
<input type="hidden" name="from">
<input type="hidden" name="email" value="address@website.com">
<input type="hidden" name="subject" value="whatever">

You can also use javascript to create a function which takes the value of one of your fields on a form, and puts it in the Subject line of the email which is sent... but that's another story... *grin*

Don't sure about "From"...
Try
mailto:somebody@inter.net?Subject=Test&Cc=somebody2@inter.net
