Double Sided Scans

Is it possible to scan double sided documents and then merge them back together in a .PDF format?

Yes, but it would be a very manual process.  You would scan one side to one file, then the other side to another file, and cut and paste from on into the other.

If you have Acrobat Capture and a document feeder, scan the stack. Reinsert the stack other side up. Arrange the individual pages from within Acrobat. Result? One pdf file from a stack of dblsided pages.
