I am assuming you want to add the shortcut to your Outlook Bar.  You cannot create the shortcut on your desktop or a file folder like you would a standard Windows shortcut.

Make sure your Outlook Bar and your Folder View is visible (through the View menu).  Then, go to Tools > Services and go to the properties of Microsoft Exchange Server.  In the Advanced tab, add the Mailbox containing the calendar you want to make the shortcut to in the "Open these additional mailboxes" box.  When you OK out of all the previous windows, you should then be able to view that view that mailbox in your folder list (so long as you have proper permissions to view it).  Expand the mailbox so the calendar folder appears.  Drag and drop the icon to your Outlook bar and it should create the shortcut.
