You can backup the server with Exchange on-line using NTBACKUP under Windows 2000. See this link - http://support.microsoft.com/default.aspx?scid=KB;en-us;258243&.

Or if you really want to do an off-line backup simply: -
1. Right-click My computer
2. Select Manage
3. Expand services and application
4. Select Services
5. Stop all the Microsoft Exchange services - this will make mail un-available
6. Run a full backup of your server - however I would avoid backing up the M: drive.
7. Once complete restart all services.

If you server is running other databases i.e. SQL, WINS then those databases will fail to be backed up as they will be seen as open files.

Hope this helps.
