What's the best way to monitor network activity? I want to capture all activities by two different IPs only!

Use a packet sniffer.  Some good free ones are:

ethereal (very nice GUI)
snort
tcpdump
tcpflow

If this is something you want to do permanently, or for a long period of time, snort may be the best choice as it has a daemon mode and a lot of options for packet logging.
