In your home directory you will find a file called .pinerc you can manually edit this file and look for the line that says "smtp-server=" and add your smtp server, OR you can start pine, and press S for setup, and then C for config. You'll find an entry where you can put yout smtp's server address in there. That should do the trick for you.
