What sort of mail server are you looking to set up? SMTP, POP3 or IMAP?

Since you're starting from scratch, use qmail or postfix. Avoid Sendmail, as it tends to suffer from a lot of security hole problems, and it's a pain to work with.

By default, qmail has relaying turned off, which will prevent spammers from using it for evil deeds. Postfix most likely has relaying off by default as well but I a not certain.

I use qmail and would be more than willing to help you along with that. Google for "Life with qmail", which is the definitive startup document. That's all I ever needed to get it going, but there are a few hard parts in it. Hint: make darn sure you do the "rcpthosts" part correctly.

As to Greg's comment above, SMTP is standard on all Mailservers. POP3 and IMAP are what the client programs use to talk to the mailserver. In qmail POP3 is built in. IMAP is a separate bit of software.

Let me know...
