How do I change default encoding and shell type in Terminal?

At the time I'm using default setup for terminal and I would like to change these settings. First I want to use bash as default shell type and second, default encoding shoud be set to support norwegian character set. Where do I do this?

Wit the Terminal open go to Terminal>Preferences and Terminal>Window Settings.
