Exchange 2000 running very slow soon after defrag

Ran defrag over weekend by first dismounting admin mailbox, then ran defrag which completed sucessfully, mounted mailboxes, tested Outlook and it appeared to be running well.  Then client traffic increased Monday morning and Outlook bogged down to the point of inability to send emails.  Anyone have any suggestions of what to do?

Not to state the obvious but you did reboot the mail server after the defrag right?

Yes, rebooted server and also stopped the smtp service.  Did not improve.

I am going to annouce closing of this question since I have determined the problem to be the Corporate edition of Symantec AntiVirus being the cause of the performance issues.  Looks like meintsi is the only comment received.
