In you <CFMAIL> tag include the following attributes:

 SERVER="127.0.0.1" PORT="25"

changing the 127.0.0.1 to the proper mail server (you shouldn't need to change the port), ex:

<CFMAIL TO="#form.to#" FROM="#form.from#" SUBJECT="Hello World" SERVER="127.0.0.1" PORT="25">
Hello World
</CFMAIL>

you can also set the value in the cold fusion adminsistrator, if you're only going to use a single mail server this is a better option.  This way if you ever need to change the ip address of your mail server you won't have to dig though all your cf pages to make the update.
