URGENT-Sharepoint 2003 migration & customization questions

We have our Sharepoint 2003 on our test svrs. We want to port it to the prod environment.

Also, we want to do customization  on our left menu which is provided by Sharepoint

Pls send help, docs, links etc etc, that will provide step by step info on the above.

they have they're own backup/restore tool.

Make sure u have the right permissions to use it.
