What's premium edition?

There are four flavours of Windows 2003 Server:

Standard
Enterprise
Web
Data Center.

You cannot install Exchange on Web, otherwise the rest are the same.
Microsoft have some excellent white papers that step you through every stage. Available for free download on their web site.

SBS is different. If you are asking questions then you need to make it clear that this is the SBS version.

Basically follow the wizard that starts during the install. Microsoft have made it very easy. The wizard will step you through each stage and then install the application for you.
The configuration out of the box is very good, if you need to do something else then Microsoft have lots of wizards which guide you through each stage. If there is something specific that you want to do with Exchange after that then post back.
