How do you want to extract them and for what purpose? If you just want the data from the currently open mail you can write a MACRO that gets it, if you want to extract all the addresses from the mail items in a specific folder you can use a program like sunray suggested (probably the easiest) or white your own using either a MACRO in outlook or an access or ecxel file. it all depends on what data you want and what you plan to do with it.
