So you want
FROM to be Conference Attendees
TO ( send to a group so that none can see each others email address)

What version of outlook do you have ?

Go to tools --> email accounts --> view or change existing email accounts  --> click on the account and press CHange
give "Conference Attendees" under " Your Name"

When you compose an email , give the group email addresses in BCC field
