Just remove the path from the profile part of active directory,  the profile is copied locally and updated every time you login or out.  no one will notice at first only when someone sits down at a machine they have never logged into before and have to call tech support to have outlook "Installed" :)

I guess you could figure out some script for their login to do a registry hack for outlook.  might be fun might be a nightmare.

in each user's settings (in AD) you have to go to the Profile path and remove the path.  It should be blank for locally-stored profiles.  Keep the profiles stored on the server and watch to see if they are accessing Outlook via that share once you make the change.  Also, you can try it out with a section of people at a time and see how much easier your server will breathe using local profiles!
