InstallShield to remove an old application

Is there a way that I can setup InstallShield to automatically remove an old program before it executes the new instance?

No, without the uninst.isu then finding things such as the path could be difficult.  You need to write the uninstaller with the installer to capture user selectable items such as installation type etc.
In your position I would write some code to do this which would either launch after the installshield setup or on first run of your new program.  That way you have more control over the process.
How much uninstallation needs doing?  Are you using registry entries? user selectable paths? different install types?  Most of the software I write doesnt use the registry.
Use the overwrite with newer components in installshield to make sure you upgrade all relevant dlls then just leave the rest.
