You know when you ask your Outlook client to send you a delivery receipt - well when I send myself a message to my server I am getting the following back:

Reporting-MTA: dns; SERVERNAME.DomainName.DOMAIN.com

what if I just want it to say mail.DOMAIN.com

How do I set that up?

Go to the default SMTP entry in the Exchange Server and edit it to show you only the mail.DOMAIN.com.
