SBS 2003 has the Server Management console with "standard management" and "advanced management".  I like this b/c it's a simple place to do a lot of my administrative tasks.  I can't find anything similar on Windows 2003 Server.  Does it exist?

It is just advanced mmc console with a lot of snap-ins.
I not now about analog for Win2003, but you can make very similar console yourself.

Run 'mmc' in the command like on your SBS, click File, Open, and open console
C:\Program Files\Microsoft Windows Small Business Server\Administration\itprosbsbconsole.msc
Then File, 'Add/Remove Snap-ins..'. There you can customize your console. Remove all Exchange, Information Center, and other SBS-only snap-ins.
Then save your console to other file, copy it to your win2003 server and try...

And one more thing... If such modified console will not work on win2003, you can always assemble your own. Just run mmc and add all the snap-ins you like.
