How to test email server without changing MX records...

Hello everyone,

I set up an exchange 2003 server over the weekend (on Win2k3 server) and I belive I set it up properly for my ".com" domain. I haven't yet taken away the POP3 externally hosted mail that we are using because I haven't figured out a way to test the thing to see if it is working.

Can someone help me figure out the best way to test the server without altering the MX records? -which is the only way I can think of.
