    Hi microcomp2go,
Well, good that you are using Panther (10.3). Just make sure the user logs in at start-up and has a user account on the domain. The Mac will not be part of the domain per se but it will in effect be able to use all the resources. As for Outlook, well you want Office for Mac, the Outlook equivalent is Microsoft Entourage. You don't need AppleTalk, the Mac OS X environment can uses TCP/IP and SMB shares just fine.

If you need the machine to authenticate against active directory, there is also a utiltiy called Directory Access in the Applications:Utilities directory. There is an option for configuring the machine to access active directory. I'm not in an environment to test it out, but that also lets you authenticate an LDAP service. I would imagine this should work just as well as that.
With the SMB service you can also setup which Workgroup the mac should look for networked machines (computer, printers, etc). I agree with NetworkArchitek though. OS X can connect to an  exchange server with it's mail program but is seriously lacking in all the features you want from the exchange server.
