Terminal Server Licensing

Is there a way I can see how many users have been on the terminal server at the same time? I am trying to see where we are at with licensing.

Simply look at the used licenses in the TS License Server.
The TS licenses are *not* for concurrent use. They are handed out to a certain client device, and that's where they will stay.
If you had (at least) SP3 installed on your TS and your TS LS before you started handing out licenses, licenses for clients that haven't accessed the TS for more than 52 to 89 days will expire and be available for re-issue.
