Windows 2003 Server - USER usage

Our network uses a Windows 2003 Server but user from the outside come in thru a Windows 2000 Server.

Is there any way to know when and how often a user access  folders on our Windows 2003 server?

You need to enable auditing on each/every folder you want to monitor:
