Can someone tell me how I can tell if an external request to my webserver on DMZ is actually reaching the web server?

You can look at the PIX' access-lists to see if you get any hits on the access-list line that allows access to the web server
      sho access-list
If you get (hitcount xxx) then you know that requests are reaching the server, as long as you have a matching static mapping..

Else, you can check the logs on the server itself.
