We are running Sun ONE Web Server v6.

Can you shut down virtual hosts, independently of each other?  So if I host multiple domains on a single IP, can I start/stop one domain without affecting the other?

If so, what is the command?

Login into the Virtual Server Administration user interface to see if you can
stop one of your virtual Host.

have a look at the following adm guide:

I have used the old Sun Webserver, it does has  restart server option in the GUI, but
    has no "stop" option.
You can have a look at the Virtual Server Administration  GUI to see if you can shuld
down one virtual host only. (you might not be able to do it in a single host!).
