Select the volume the add an include filter and select the prune option. There are several different types of filters you can use to base the time off, such as modified and access date. Access date is a popular one to use in this type of case. It would be a good idea to have two copies of this data.

Backup,
Backup window, pick your source, destination, and setup the schedule.

Options
Operation tab
Delete Files After Backup

Filter
Options are Files Modified, Created, or Accessed and Before, After, Between, or Within.

pick either
Include
Files Created or Modified or Accessed before and then pick a date
or
Exclude
Files Created or Modified or Accessed Within X3 of Days, Months, or in your case Years.
Advantage of this method is that it can be scheduled to run every six months or so to prune out more data.

Be sure to pick specific directories and not whole volumes for this type of job to make sure you do not remove system and application files.
