Moving mailboxes across domains

Hi

We have a european network where each office is their own domain and has their own exchange server. We are migrating from NT/Exchange 5.5 to 2000.  All our offices will then be part of one domain and all mail servers will be centralised in the UK. To make the migration easier we want to migrate the mailboxes onto the London Exchange prior to the move to AD. How do u go about moving mailboxes from one exchange to another when the exchange servers are in different domains? A full two way trust exists between the domains.
