Windows 2003 DHCP classed ID

I've just asked some questions about windows 2003 and dhcp, i wanted to authenticate computers by mac-adress so you guys gave me the answer that this is nog possible wiht windows 2003 but can be done different.
I can do this by classes as you gave me the folloing link:

Now i have a few questions regarding identify by classes:

When a computer is plugged in, it gets a id adres from the 2003 server, after that it get's a IP from windows 2003. How does windows 2003 recongnises that computer? On what points is the ID adressed to that computer (mac, packet level etc etc)

Can i plugin linux of mac computers and also get an ID by the windows 2003 dhcp server ?
