What happens to email when Exchange is down?

Just curious what exactly happens to incoming email when you (me) are doing maintnenace on your Exchange server, such as defragmenting the IS database or rebuilding the server, etc.....Does it all depend on the senders retry interval or will senders just get a NDR straight off?  and what does that depend on, the Informations Store service being started or the Store being mounted?

    If you have an MX record in DNS identifying it as a mail server, then it should retry based on the settings of the senders mail server.
