Backup Exec - schedule daily restore using most recent backup?

Production server with Veritas Backup Exec 9.1, scheduled daily backups ok. What I'd like to do is schedule a daily restore using that backup, basically providing a mirror of the files onto another server.
I can schedule a restore job, but it looks like I'm making selections from a specific backup job. Is there a way to say "use the most recent backup" ?

Excuse me for asking, but why wouldn't you just use a software program to copy the data directly to the second server?

I'm familiar with a program called SecondCopy by Centered Systems (www.centered.com), but I know there are many others that do similar work.  If you took this route you would save yourself a step.

I pretty much figured from experience that it wasn't going to work this way, that's we'd have to persue some other software. Thanks though.
