Is there a specific API toolkit available for programming against an Exchange Server? We need to develop a product that connects to an Exchange Server and/or directly to an EDB file. I am hoping to find a toolkit or references that tell me how to do this or point me in the right direction.

The API is described in detail on Microsoft Technet: http://www.microsoft.com/technet/prodtechnol/exchange/2003/itdev.mspx

I would suggest looking at the SDK documentation and samples - it shows how to perform various tasks with Exchange which will give you a good grounding in programming Exchange.
