mail pickup service exchange 2003

Pardon my ignorance:

I am running exchange 2003 and I frequently see email with the following in the header:

Microsoft Mail Internet Headers Version 2.0
Received: from mail pickup service by 2kbp241ex.siskinrehab.org with Microsoft SMTPSVC;

Can someone tell me what the mail pickup service is?

The pickup service is part of the SMTP transport (?) service which picks up files from the disc.  Most POP3 "connectors" are nothing more than POP3 dumpers - they dump the messages retrieved via POP3 into the pickup directory of the virtual server, typically C:\Program Files\Exchsrvr\Mailroot\vsi 1\PickUp.  The relevant Exchange service then picks up the file & processes it.

is there any way to stop it?

I do not know of an option to switch off that functionality.  It is possible to move the directory that is used (see somewhere in http://www.microsoft.com/technet/prodtechnol/exchange/guides/E2k3TechRef/f4fb781c-5d7a-495b-9f53-b09aa8c4ddf8.mspx).  You could of course set your permissions on the directory to prevent files being written there, but the consequences of this are beyond my reckoning - I do not advise this because I don't know the consequences, it's just an idea that comes to me.
