Is it possible to set up a server based rule on Exch 2003 to automatically move mail with a subject line which includes the word 'SPAM' into a mailbox.....The idea is to do this so that the SPAM mail does not reach the users mailbox, but instead gets diverted into a SPAM mailbox ....

any ideas ?

This will be via an Event Sink.
If you are using a product that tags the messages in this way, or if a third party is doing that ask them what it is, then you will find that often an event sink has already been written.
