ebook software recommendation and advice needed

I have an old course I created many years ago. I decided I would like to try offering it to the internet community. My question is, what ebook software do you recommend I use? I have never created or published an ebook online before, but I would like to do this professionally the first time.
I've secured the domain name for it. My concern now is to be able to deliver the ebook in a format easy for people to use, but not copy or reproduce electronically. Three ebook software generator web sites I've looked at are: ebookgold, exebook.com, and ebook generator by Armand Morin. Have you any experience with any of these packages? What do you recommend I use? I submitted a series of questions to ebookgold last week, but have not received any reply yet. What advice and software recommendations can you give me for this first step in creating my ebook course?
My ebook course consists of 10 small books 55 to 95 pages each, or a little over 800 pages total. I plan to offer them either separately or as a total package, probably in the $27.00 price range for all 10. My master copy is very neatly typed and created perfectly. Can I just scan in each page as a gif or jpg or must I retype the entire 800 plus pages and only scan the pictures and diagrams? I would rather just scan the text pages too, but would that result in an ebook exe file too large for a person to download on dial-up? Any and all advice and recommendations would be helpful and appreciated. Points will be split.
