I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. You will need to catalog the tapes before you can select what to restore.
How you do this will depend on what software you used to back the backup.
Though typically you'll need to load the tapes, perform an inventory to detect the tapes and then catalog the tapes to see the contents (unless the catalog already exists).
If you aren't sure try using Microsoft Backup to begin with.

I have some software that says backup on it but I don't see how to use it...
Also, How do you use Microsoft Backup and where is it?

What application was used to make the backups in the first place?
They're all different - some will encrypt, some won't, so it's important to use whichever tool you used to backup to do a restore from the same tape.

MS backup should be on your windows server, its usually under Accessories / System Tools / Backup
it has wizards that will guide you through the various functions.

If you have some specific backup software it may that MS backup wont read the tapes and you will need to install and use that software.  If you dont have the documnetation try Google to see i fyou can find it.

One thing you shoudl do now though is to write protect the tapes, this is usally done with a small sliding tab on the tape.
