Will system restore affect my MS Outlook and MY Documents if i go back about 2 weeks?

I have installed norton antivirus and its messed the whole machine up.  If i do a system restore will it affect my personal data

It should not.  When you do the restore it specifically states your personal data will not be affected.

To prevent loosing datas Open Control Panel / System / System Restore
For each partition you will be sure to not lose datas change "Monitoring"
 to "Turned Off"
Personnaly i leave the Windows Partitions on "Monitoring" and all other "Turned Off"

Files in My Documents will not be removed.
