Can I just delete system32\logfiles\smtpsvc1\exxxxxxx.log files?

From what I can tell these log files are generated by the smtp virtual service because the enable logging box is checked.  Is there a way to have them deleted automatically like the other Exchange files after a backup?

It depends whether you actually use the service or not. Normally if you uncheck the enable button they should be deleted by the nect reeboot.
