I have a prollant 3000. It has PCI slots in it for expansion. Its running Windows NT. Will NT support a new 10/100/1000Mbs card so i can crank it up to 1000?

That depends solely on the card's manufacturer, whether they provide drivers for NT4 or not ...
Only if you have NT drivers for that card.  NT is not supported by Microsoft anymore, nor by many other companies making products.

this one claims it can and is nt compatible

as someone already said 1000 will be hard to achieve in practice due to limitations in motherboard cpu and pci bus
