Which of these options do I need to configure for DHCP in Server 2003?

All I can see that seems to be needed is option # 006 - DNS Server. Anything else I need to worry about configuring for this DHCP scope? It's a very simple environment. Thanks.

Is the Router setting just the IP address of the default gateway?

Where do I get the correct node type to enter, or will it be obvious from a drop-down lost or something? Thanks!

I usually set node type to 8 - Hybrid.  Router is the gateway, yes.
