Offline files on network share

I have a network share maped to the users k: drive, and also have it set as offlines files. Can someone explain exactly how offline files work, I mean if the user is connected to the network creates a folder on the K:\ drive and unplugs his network cable. will the copy stay at the server or at his workstation? is the user always working on the network or locally?.
