How do I go about backing up specific items on my server?

I've decided to reinstall my server and I only want to preserve certain items. Without backing up anything else, how can I backup my Exchange Mail Store? Also if I only back this up and restore it on the new build, there won't be any problems will there?

    I would suggest using Exmerge to dump your mailboxes to PST files which you can then reimport later to the new server.
