Exchange 2003--Easiest way to stop exchange so I can upgrade mail secuirty

I need to upgrade my mail security....When I run the installation it wants to stop the services, which would leave us vulnerable.  

What is the best way to prevent incoming email while I upgrade the mail security?  Can I get away with just stopping the mail security service?

if you stop smtp service the mail flow will stop.

you can also stop the information store service so that no user can login into their mailbox at that time. this will also prevent delivery of new email to the users
