Do you want a group or a contact? You can create Distribution Groups or Contacts. A DG is a group of user accounts and can have an email address, like mygroup@mydomain.com. A contact is a email address which doesnt require a mailbox. You can create both from Active Directory Users and Computers.

You can do a quick little workaround...

Create a user account in AD. Then create the account in exchange, and associate it. Then delete the user account in AD and you'll still have the exchange account without an associated account with it.

I want to add careers@ourdomain.com address and I want to forward any inbound messages to two users. I won't need a mailbox since this mail will be forwarded. I am guessing a group would be the best senario.

As rmrustice mentioned:  create a new distribution group called careers for instance with the careers@ourdomain.com and then add the two users to that group.
