Deny access to Sharepoint folder

Can anyone tell me how to deny a user access to a sharepoint services folder? The most basic setting I can find is just list items.

You need to post some more details here. What kind of permissions do you want to give? What SO are you using?
Permissions/roles on Sharepoint (WSS) in the current version are Site-wide. You cannot set permissions on individual content branches. (in the new version this will be improved). So if you want more divers permissions than "reader" / "writer" for different users on different objects, you will need to create more Sites, and that is more work to implement/maintain.
